PGI Guérande Fleur de Sel

PGI Guérande Fleur de Sel is made up of fine, light crystals which form and collect in wide layers on the surface of the crystallisation ponds called oeillets.
The salt is harvested every evening, during the hottest summer days, as the mother waters need to reach very high temperatures. The flower is gathered by delicately skimming the surface of the mother water.

Our Fleur de Sel does not undergo any processing between its harvesting and packaging.
So that the final product is the same as it was when we harvested it.

Delicate flavour with a texture that melts properly in mouth.
It can be used on foie gras, shellfish, fresh or saltwater fish, meat, as well as even the simplest starters (raw vegetables, sauces) and home-made French fries.

PGI Guérande coarse grey salt

PGI Guérande coarse grey salt is harvested every day in summer from the clay beds of the salt marshes, which give the salt its grey colour.
Grey salt is unwashed, unrefined and additive- free.

Coarse grey sea salt can be used for cooking (stocks, stews, shellfish, pasta or rice).
It is also excellent for the traditional salting of fish and meat, due to its fast action.
Thanks to its moisture, it is considered one of the best salts for cooking in a salt crust “croûte de sel”. This cooking method gives meat or fish an incomparable texture and a delicate flavour when mixed with herbs and spices before cooking.
Highly recommended for bakery and meat salting, as it rapidly melts.

Coarse grey salt is dried and sifted, to be used in salt mills and in herb and spice blends.
