Description

This enzyme acts as a biological "glue", binding proteins in foods (meat, fish, seafood, dairy).

Origin:
NATURAL enzyme produced through the controlled fermentation of a selected strain.

Properties:
It improves the properties and finish of the final producto: texture, consistency, shape, elasticity, heat stability, and liquid retention, without chemical additives.

Mode of use:
- 1 product 3 applications: Meat/Fish/Dairy.
Meats: sausages, cooked ham, burgers, fillings, etc.
Fish: reconstitution and assembly of raw fish and seafood pieces to obtain a whole, uniform piece.
Dairy: yogurt, fresh cheese, processed cheese.
- Works in both cold and hot conditions.
- Powdered product that does NOT affect the taste or color of the final product.
- Mix directly with the raw product (meat, fish, dairy), ensuring even distribution.

Storage Conditions:
- In its original unopened packaging, store in a cool, dry place at a temperature not exceeding 10°C.
- Once opened, use immediately or reseal tightly and store at cold temperature (4°C).

Technical note:
Enzyme that does NOT require heat deactivation.
Allows freezing.

Recommended dosage: 1g to 15 g per kg.
