Transglutaminase

NATURAL enzyme produced through the controlled fermentation of a selected strain.

This enzyme acts as a biological "glue", binding proteins in foods (meat, fish, seafood, dairy).

It improves the properties and finish of the final producto: texture, consistency, shape, elasticity, heat stability, and liquid retention, without chemical additives.

Applications:
1 product 3 applications: Meat/Fish/Dairy.
Meats: sausages, cooked ham, burgers, fillings, etc.
Fish: reconstitution and assembly of raw fish and seafood pieces to obtain a whole, uniform piece.
Dairy: yogurt, fresh cheese, processed cheese.

-Works in both cold and hot conditions.

-Powdered product that does NOT affect the taste or color of the final product.

-Mix directly with the raw product (meat, fish, dairy), ensuring even distribution.

Technical note:
-Enzyme that does NOT require heat deactivation.
-Allows freezing.
