What are enzymes?

-Enzymes are proteins.
-They are biological catalysts, meaning they speed up specific biochemical reactions.
-They can break down molecules or build new ones.
-They are classified based on what they react with.
-They come from plants, animals, and microorganisms.
-Enzyme activity is controlled by 3 factors: time, temperature and pH.
-They are declared as PROCESSING AIDS (usually exempt from ingredient labelling in finished products).
