Mode of use:
Mix with a part of the sugars, then add to the liquids. Whisk.
Technical note:
It stabilizes the sorbets by reducing crystallization.
Recommended dosage:
Sorbets: 2 - 4 g/kg.
Frozen sauces: 1 g/kg.
