Spherification

It consists of a controlled jellification of a liquid, once submerged in a specific bath, liquid turns into spheres.

We obtain this effect thanks to the reaction of the Alginate, jellying agent made of seaweed, with a rich solution in calcium.

Tres tipos:

Esferificación básica

1 - Basic Spherification:

It consists of a base product with Alginate that interferes inside Calcic’s bath with water to form spheres.

When using this spherification process, the pearls must be served in a very short time because the Alginate continues its jellying action inside the final product.

 

 

- Prepare a bath with Calcic: 5g per 1L bottled water. Leave it to stand for 4 hours to remove air.

- Introduce the product with Alginate inside the bath of Calcic, leaving the spheres submerged from 30 seconds to 3 minutes, depending on their size.

- Rinse the spheres in bottled water to complete the process. To be served within 15 minutes.

Esferificación Inversa

2 - Inverted spherification:

It consists of a base Calcic or Gluconolactate product that interferes in a bath of Alginate. 

This kind of spherification allows us to keep the spheres, because the gelification only frees in the outside not in the inside..

 

- Prepare a bath with Alginate: 5g per 1L bottled water with low levels of calcium (3mg/L).
Leave it to stand for 4 hours to remove air.

- Pipette the solution with Calcic or Gluconolactate inside the Alginate bath, leaving the spheres
submerged from 30 seconds to 3 minutes, depending on their size.

- Rinse the spheres in bottled water to complete the process.
You can serve immediately or put in the fridge. Does not allow deep-freezing.

 
Multiesferificación

3 - Multi-spherification:

 

- Prepare a bath with Alginate: 5g per 1L bottled water with low levels of calcium (3mg/L).
Leave it to stand for 4 hours to remove air..

- Pipette the solution with Calcic or Gluconolactate inside the Alginate bath, leaving the spheres
submerged from 30 seconds to 3 minutes, depending on their size..

- Remove the pearls from the Alginate bath and drain the excess of Alginate.
Gently place the spherifications together inside a mold and leave them to stand for 1 minute before
unmolding.
Put in the fridge if you don´t serve them inmediately.

In order to get a correct spherification, it is very important to have a pH base from 4 to 6,5.
